PRESENTATION
Following the very successful previous conference, held in 2023 in Stockholm, Spain will host the International Conference on Gastronomy under the theme «Reframing Gastronomy“.
The event, organized by the Royal Academy of Gastronomy of Spain in collaboration with the CEU University Institute “Food and Society”, will take place from 27 to 29 March, 2025, at the facilities of CEU San Pablo University in Madrid.
The central focus of the SPAIN GASTRONOMY CONFERENCE is defined in view of the fact that the concept of gastronomy as an eminently recreational activity has become somewhat obsolete and that the other dimensions of the of gastronomic value chain, encompassing production, distribution, preparation, consumption and waste management, must be taken into account, in a multidisciplinary and international approach. Therefore, the aim of the Conference is to address from a scientific, academic and professional point of view this new social, economic, psychological, medical and cultural scenario of this new interpretation of gastronomy. The criteria of sustainable production and healthy eating naturally complement the traditional concept of enjoyment associated with gastronomy.
For this reason, we will bring together researchers, academics and professionals from different fields of science, academic disciplines, research networks, and policy areas to discuss this new framework for defining gastronomy as an integral activity, with the main focus on nutrition, health, and sustainability.
As a lead-up to the SPAIN GASTRONOMY CONFERENCE, an Expert Meeting ‘Destination Madrid: Quo Vadis Gastronomy and Nutrition?’ took place on November 20-21, 2024, at the University headquarters. The meeting highlighted the key importance of working together on nutrition and gastronomy in order to eat better, enjoy, and do it in a sustainable way.
We look forward to welcoming all those interested in Gastronomy from a holistic perspective to Madrid on 27-29 March 2025. The conference will feature internationally renowned speakers, as well as young researchers, who will be able to present their work in the form of plenary lectures and abstracts. I would also like to point out that the proceedings of the conference will be published in an indexed scientific journal of the highest prestige.
